High-Protein Seeded Bread - Bread Machine

🍞 High-Protein Seeded Bread

Bread Machine Recipe • About 15g Protein Per Thin Slice • Best Toasted!

I've been experimenting with homemade breads, trying to find something that gives me a lot of protein without a lot of carbs, while still letting me enjoy bread.

This one has definitely been an experiment! The first version was a little too dense and needed some tweaking, but that's part of the fun of making things yourself. You change a little here, add a little there, and eventually find something that works for you.

For this version, I used real maple syrup instead of an artificial sweetener and added sunflower and pumpkin seeds along with hemp hearts.

The result is a hearty, seeded, high-protein bread. One thing I learned pretty quickly: this is definitely a better toasting bread! Depending on your toaster, it may even need a double toast to get that nice crispy texture.

We also use a meat slicer for our homemade breads, so I was able to get 12 nice, thin, even slices from my loaf.


🌻 Ingredients

  • 1 cup warm water

  • 1 tsp real maple syrup

  • 2 eggs, lightly beaten

  • 2 Tbsp butter, softened or melted and slightly cooled

  • 28 g oat fiber

  • 70 g ground flax meal

  • 180 g vital wheat gluten

  • ½ tsp xanthan gum

  • Salt, to taste

  • 1 Tbsp active dry yeast

  • ¼ cup sunflower & pumpkin seed mix

  • 3 Tbsp hemp hearts


🍞 Bread Machine Instructions

I load this bread into my bread machine basically the same way I make my other breads.

Step 1 — Wet Ingredients

Add to the bread-machine pan:

Warm water → maple syrup → beaten eggs → butter

Step 2 — Dry Ingredients

Add:

Oat fiber → flax meal → vital wheat gluten → xanthan gum → salt

Step 3 — Yeast

Make a small indentation in the top of the dry ingredients and add the active dry yeast.

Try to keep the yeast from directly touching the salt when you first load the machine.

Step 4 — Seeds

Add the sunflower/pumpkin seed mixture and hemp hearts at your machine's add-in signal, or toward the latter part of the kneading cycle.

Now you have two choices!


OPTION 1: 🍞 Let the Bread Machine Bake It

If you want the bread machine to do everything, select the Basic/White Bread cycle.

If your machine lets you choose a crust setting, I'd use light crust. This high-protein bread can brown and dry more quickly than traditional white bread.

Take a peek during kneading.

During the first several minutes, check the dough.

You're looking for a soft, slightly tacky dough ball.

This dough contains a lot of vital wheat gluten plus flax and oat fiber, so don't expect it to behave exactly like regular white-bread dough.

Once you're happy with the dough, close the lid and let the bread machine handle the rest:

Kneading → Rising → Baking

When it's finished, remove the loaf from the pan and let it cool completely before slicing.


OPTION 2: 🥖 Bread Machine Dough Cycle + Oven

This is the method I used and is a great option if you want more control over the shape and baking.

Select the Dough cycle on your bread machine and let it mix, knead and complete the first rise.

When the dough cycle is finished:

  1. Remove the dough from the bread machine.

  2. Gently shape it into a loaf. You don't need to heavily knead it again.

  3. Place it into a greased loaf pan.

  4. Cover loosely and let it rise for approximately 30–45 minutes, or until noticeably puffy.

  5. Don't worry if it doesn't double in size like traditional white bread.

  6. Bake at 350°F for approximately 25–35 minutes.

  7. If the top begins browning too quickly, loosely tent it with foil.

  8. Remove it from the pan and let it cool completely before slicing.

Air-Fryer Oven Option

I used my air-fryer oven and baked mine at:

340°F for approximately 25 minutes

Every air-fryer oven is a little different, so I'd start watching it toward the end rather than relying only on the clock.


🔪 About the Slices

We use a meat slicer for our homemade bread.

That gave me 12 thin, even slices from this loaf.

That's important when looking at the macros below. If you're slicing your loaf by hand and making thicker slices, you may get fewer slices, which means the nutrition per slice will be higher.

🔥 This Bread Is Better Toasted!

This is probably my biggest tip for this recipe.

Toast it!

This isn't a light, fluffy grocery-store white bread. It's a hearty bread made with vital wheat gluten, flax, oat fiber, hemp hearts and seeds.

I found that I liked the texture much better toasted.

And don't be afraid of the double toast! 😂

Depending on your toaster, one cycle may really just warm it. A second round can give it that crispier exterior that makes a big difference with this bread.

Because we're slicing ours thin with the meat slicer, those thin slices toast especially nicely.

I think it would be great for:

  • Buttered toast

  • Cream cheese toast

  • Egg sandwiches

  • Open-faced sandwiches

  • Avocado toast

  • Tuna or chicken salad

  • Grilled cheese

  • Breakfast toast

You can also freeze the individual slices and pull out just what you need.

Remember, your macros will change depending on the brands you use and how thickly you slice your loaf.


🌻 A Little Note From My Kitchen

I'm not claiming I've discovered the world's perfect low-carb bread. 😂 I'm experimenting.

I wanted something that would let me enjoy a piece of bread while also giving me a significant amount of protein.

And I'm learning that sometimes a recipe doesn't have to perfectly imitate the original to earn a place in my kitchen.

This isn't my soft, fluffy sandwich bread. This is my protein toast.

Once I started thinking of it that way—and toasted it really well—I liked it much more.

I also like that I can use just a teaspoon of real maple syrup rather than adding a larger amount of artificial sweetener. It's one teaspoon spread throughout an entire loaf, and that's a trade-off I'm comfortable with.

And, of course, I'm already thinking about the next experiment.

Could this dough become sandwich thins? Hamburger buns? Hot-dog buns? Thin bagel-style rounds?

Probably.

And if I try it and it works, I'll share that experiment too. ❤️

Pizza Bowls


 

Created this for lunch today. Around town here everything is bowls and they all cost upwards of 8 dollars. The particular one I created, was just from what was in the fridge and maybe a few cans from your pantry.

I have also become a little more picky on what is in and on my food. What is made with or without. So to control that it becomes something I do more at home now.

Pizza bowls are the new thing here. So I am getting to where I like to make things at home, not because who doesn't like take-out, but because I like to know what is in my food.
This was very simple and actual was start to finish, 20 minutes.

I actually bought a pan that fits in my air fryer, but you can find something that fits yours, or your oven or your toaster oven. It just needs to hold all the goodies.

I started in mine with foil lining my pan and spraying well (so the melted cheese would come up)

Pizza Bowls (Just how you like them)

The players

Diced tomatoes, sauce, spaghetti sauce, what you would like on a real pizza
spices oregano, Italian, salt, pepper
toppings
pepperoni, turkey pepperoni
jalapenos
onion
pepper
garlic
pickled jalapeno
pickled hot yellow peppers
cheese ( any type you like)
meats (if you like, hamburger, sausage, chorizo, Italian sausage, turkey, bacon)

The game

Collect your toppings and spices. This is a cool way to clean out your fridge and get your veggies. I had diced tomatoes, mushrooms, turkey pepperoni, onion, minced garlic, oregano, Italian spices, fat free mozzarella, and fat free cheddar and a container of mozzarella balls (I added a few at the end)
and found some pickled jalapenos and yellow peppers.

Line a pan with foil and spray well then...

Now you are going to layer in everything like a thin lasagna, don't worry about covering entire bottom as you layer on it fills in the last layer I made sure I had a little bit of cheese and pepperoni to finish.

I popped mine into my air fryer at 400 for 10-15 minutes


Let sit and cool a minute so the cheese firms up a bit. It is so yummy and was so filling. A salad would have been good with it also.



WW Blue Notes
At this point it is only 2 points.
I however found a container of mozzarella balls and I added an ounce and they were 4 points.
So here is my lunch (this is a 9x6 pan)

Crustless Pizza


Hey Ya

In the mood to change things up. I every now and again, make this crust less pizza.

It is Low Carb, Keto friendly. The entire 10 inch gave me 6 net carb /26 protein /449 calories. You could eat half and be very full.

I tried to make it WW blue friendly and to be truthful it is worth the 10 points. I will elaborate on that under the WW Blue Notes

So let's get started.

The Menu

Crustless Pizza

The Players:

1/4 cup of shredded cheddar cheese

1/8 cup of shredded parmasean cheese

1/3 cup of shredded queso cheese

4 slices of blacklabel precooked bacon 

**any toppings, just make sure they are diced small.

The game:

Take a large flat pan (10-12 inches atleast)

Spray with non stick aresol

Sprinkle the cheeses evenly over the bottom, kinda grouping so you wont have any holes.

Put on toppings.

Turn on the heat and start to melt the cheese, go around with a spatula and clean up the edges, I slighty push in towards the middle, to make it look pizza like. 

Cook medium and keep watch, pick up the edge every now and again to see how brown it is getting.



When you get it to a good brown. Turn off and put to the side.



Wait about 5 minutes and then slip a spatula under to loosen up and it should slide right onto a plate.

The longer it cools the crunchier it gets.



WW Blue Notes

For the WW plan I used a combination of cheese to make it taste good, especially using a lower fat cheese. You can also add more stuff on top, like any 0 point veggies, (just dice them very small so they will cook) You could also cut back on the bacon to save a few points. I ate the entire thing, but you could share it. It made a 10 inch pie. It is also very filling.

BLT CHAFFLE


BLT CHAFFLE



I am back so soon, because now I want to show you what I used and put on my chaffle. Not sure on the calories. I really should check on that and the carbs. As I get better at posting I hope that I can be that source of information.

The total points on the BLT Chaffle is 3 WW blue points.

BLT Chaffle

Ingredients

ITEMS NEEDED

Hormel Black Label Fully Cooked Original Bacon

2 slices

Hellman’s Light Mayonnaise

1 tbs

Leaf

Chaffle (recipe on previous blog post)

Instructions:

1.     Make the chaffle first. The recipe is in the previous post.

2.     I always fold my bacon and lay in the dash, for a minute to warm it up and make a little crispy.

3.     Then put together the BLT. I usually do a little mayo on top and bottom. I salt and pepper them also. Then the lettuce and tomato, bacon.

4.     Stack it up and cut in half .



 

WW BLUE NOTES

·         This was a really low point lunch and I would have probably been satisfied completely but I had that dag on parsnip sitting around so I made some fries.

With the Mini Dash Waffle Maker 

Let me start out saying, I am doing WW but I am also trying to get away from the carbs of certain foods. I am trying to stay closer to the better foods for my body. I have been finding that the paleo and the keto recipes are really a great way to look at foods. When I eat this way, I have tons of energy and I have a clearer mind. I feel better and move better. Now I need to watch the calories if I want to lose the weight. Cause no matter what diet or lifestyle you take. It is always going to calories in, calories out. You have to move also.

Here is what the mini dash looks like, there are a lot of stores that are selling them at a nice price. I have actually gotten all three. One does a waffle, on a grill, and on is just plain. Very handy for an egg or a pancake. Even a flat bun-ish thing for a hamburger or a sandwich.



Now carbs are not bad things, but I find that the better ones, the lower carb items, make me fuller and happier. Or maybe it is the combination of the protein and fat with it. Anyway, try things for yourself and you will find what you like.

Easy Chaffle

Ingredients

ITEMS NEEDED

AMOUNT NEEDED

Egg

Fat Free Shredded Cheddar Cheese (Kraft)

½ cup

(extra add on if you like) jalapenos

1/8 minced

Instructions:

1.     Mix egg and ¼ cup of the cheese together

2.     Take you mini waffle maker

3.     Spray your waffle maker.

4.     The cheese you held back separate into 4.

5.     Sprinkle a 1 of the little bit of the cheese you held back on the bottom, then pour in half the mixture onto the waffle maker and gently spread out. Sprinkle a little more on top and close up.




6.     This takes about 3 minutes. I usually like mine really crispy. So I go just a little more.

7.     When done, lay to the side to cool a bit. And do the other half the same way.



Now when you are finished you can no put what ever you like on it, in it and between it.

 *I find this a really handy for a quick sandwich. Loving that the carbs are very good on this. You can make any kind of sandwich.
