Pizza Bowls


 

Created this for lunch today. Around town here everything is bowls and they all cost upwards of 8 dollars. The particular one I created, was just from what was in the fridge and maybe a few cans from your pantry.

I have also become a little more picky on what is in and on my food. What is made with or without. So to control that it becomes something I do more at home now.

Pizza bowls are the new thing here. So I am getting to where I like to make things at home, not because who doesn't like take-out, but because I like to know what is in my food.
This was very simple and actual was start to finish, 20 minutes.

I actually bought a pan that fits in my air fryer, but you can find something that fits yours, or your oven or your toaster oven. It just needs to hold all the goodies.

I started in mine with foil lining my pan and spraying well (so the melted cheese would come up)

Pizza Bowls (Just how you like them)

The players

Diced tomatoes, sauce, spaghetti sauce, what you would like on a real pizza
spices oregano, Italian, salt, pepper
toppings
pepperoni, turkey pepperoni
jalapenos
onion
pepper
garlic
pickled jalapeno
pickled hot yellow peppers
cheese ( any type you like)
meats (if you like, hamburger, sausage, chorizo, Italian sausage, turkey, bacon)

The game

Collect your toppings and spices. This is a cool way to clean out your fridge and get your veggies. I had diced tomatoes, mushrooms, turkey pepperoni, onion, minced garlic, oregano, Italian spices, fat free mozzarella, and fat free cheddar and a container of mozzarella balls (I added a few at the end)
and found some pickled jalapenos and yellow peppers.

Line a pan with foil and spray well then...

Now you are going to layer in everything like a thin lasagna, don't worry about covering entire bottom as you layer on it fills in the last layer I made sure I had a little bit of cheese and pepperoni to finish.

I popped mine into my air fryer at 400 for 10-15 minutes


Let sit and cool a minute so the cheese firms up a bit. It is so yummy and was so filling. A salad would have been good with it also.

At this point it is only 2 points.
I however found a container of mozzarella balls and I added an ounce and they were 4 points.
So here is my lunch (this is a 9x6 pan)

Scotch Eggs ww blue



Scotch Eggs

First let me explain. I am trying to use what I have at home with a normal family. So some of the items I use will be higher in points.

For this one you can use other meat to wrap around the egg.

The Butterball Turkey breakfast sausage is 2 points for 2 oz 

The Jennie O is 3 points for 2 1/2 oz

The Jimmy Dean Pork breakfast sausage is 7 points for 2 oz

One more option which would be to purchase the leanest ground turkey and add to your own breakfast spices for sausage. I found some at the Amazon.com. If I had all this, then this would be what I would have used. 

This is for the blue plan. and boiled eggs are 0 points.

 The choice is all yours and your plan and your points. 7 is still okay for me, because I only eat one and it is filling enough. The are good cold also. So matter what meat you use it is all the same technique. 


The Menu:

Scotch Eggs   (ww blue - this recipe and with the jimmy dean - 7 points an egg)

The players:


1lb of jimmy dean breakfast sausage ( I doubled mine)

8 hardboiled and peeled eggs.

Pam spray

The game:

Cut the sausage up into 2oz portions.


Spray your hand with a little pam spray or non-stick, makes it easier to mold onto egg.



Take 2 oz and patty down a bit in your hand and lay egg in it. 



Carefully squoosh and mold it like a cover on the egg.


It will make 8 with the 1 lb, but I double it for a large family. Plus they are very good cold. 

Spray air fryer and drop in 6 and cook 360 for 10 min. (go in once and turn over gently)  If you want browner, then step up the heat to 400. for another 2-4 minutes.

** make sure all of the egg is covered.





If you do it in a regular oven, spray pan, or parchment, or foil and the lay in eggs, Bake 350 for 20 minutes and turn over in middle also.

The reward:



There are such a hearty fast quick pack of protein. What could be better than sausage and an egg.

These also are a great idea for meal planning. You can trim the points down and add a little fruit and you have a complete meal.

This was a really satisfying. I used my instant pot to make 24 eggs at one time. I will post on how easy that can be. I love just a hard boiled egg and a cheese stick.

*** If you do not make them right away, make sure to store in fridge to keep the sausage from getting warm and melting a bit.
