Chicken Snack Wrap




Hello, and I hope we’re all making it into the new year feeling steady and well.

Fast-food cravings don’t disappear just because your eating habits change. For me, those cravings tend to point toward something familiar — and more often than not, that means a chicken wrap.

Lately, my family and I have been looking for better alternatives — ones that support our health and make sense for our grocery budget. This recipe came from learning to pause and ask, What am I really craving here? Once I figured that out, the solution wasn’t cutting it out — it was rebuilding it in a way that fits all of us.


Why This Swap Works

There was a time when grabbing something quick felt like the easiest answer. And while convenience still matters, I’ve learned that small changes can make a big difference — not just nutritionally, but financially too.

This wrap keeps the comfort and familiarity of a fast-food favorite, but it’s built with intention:

  • A measured portion of chicken

  • A lighter, protein-rich sauce

  • A lower-carb wrap

  • Just enough cheese to feel satisfying

It’s not about perfection. It’s about finding options that actually support the life we’re living now.

Ingredients (1 wrap)

  • 3 oz lightly breaded chicken nuggets (about 4 pieces), cooked and chopped

  • 1 low-carb tortilla (about 60 calories)

  • 2 Tbsp Greek yogurt ranch dip (recipe below)

  • 1 Tbsp shredded cheddar cheese

  • Shredded lettuce

This makes enough for several wraps, bowls, or veggie dipping.

Ingredients

  • 2 cups plain nonfat Greek yogurt

  • 1 packet ranch seasoning mix

Instructions

  1. Add the Greek yogurt to a bowl.

  2. Sprinkle in the ranch seasoning.

  3. Stir until smooth and fully combined.

  4. Store in an airtight container in the refrigerator for up to 5–7 days.

Tip: This dip gets even better after chilling for an hour.

  1. Cook the chicken according to package directions. ( I do mine in the air fryer - crispy everytime)

  2. Chop into bite-size pieces.

  3. Lay out a tortilla (using again a low carb one)

  4. Spread 2 tablespoons of the ranch dip over the tortilla.

  5. Add lettuce, chicken, and a sprinkle of cheddar.

  6. Wrap up and eat. (when I wrap it I put it all down the middle and then bring up the bottom a bit and then roll the sides)

  • I used Bare nuggets, but there are plenty of good options available.

  • Costco carries a Kirkland version, and there are a few other similar brands depending on where you shop.

  • Look for nuggets made with whole chicken breast and a lighter breading — they tend to work best for wraps like this.

  • Air frying keeps the chicken crisp without adding extra oil.

  • Chopping the nuggets helps distribute the chicken evenly so every bite feels balanced.


Make It Fit Your Life

  • Skip the cheese to lower calories a bit more

  • Turn it into a bowl if you don’t want the tortilla

  • Add tomatoes or cucumbers for extra crunch

  • Great for busy days when you want something quick but intentional

Creating in my kitchen again, and you know when the weather cools off, I start craving that cozy, pumpkin-spice kind of comfort — but in a way that still fits my goals. This Pumpkin Protein Chia Pudding has become one of my favorite little fall treats. It’s creamy, lightly sweet, and tastes like a spoonful of pumpkin pie filling — just chilled and protein-packed.

What I love most is that it’s made with simple ingredients I usually have on hand: pumpkin purรฉe, a splash of vanilla protein shake, and chia seeds. It’s bariatric-friendly, easy to portion into 4-ounce cups, and feels like dessert without any guilt. You can meal prep a few at a time, top with sugar-free whipped cream, and have a ready-to-grab fall treat that’s full of flavor and comfort.

And honestly, if pumpkin pie used to be your weakness — this is the swap you didn’t know you needed. It gives you all the warm, cozy flavor of pie season, but in a way that leaves you feeling satisfied and light instead of weighed down. Tiny Meals- Chicken Feta Spinach Burgers





Sometimes the best meals come from just blending what’s on hand. I tossed chicken breast, spinach, feta, onion, and a few seasonings into the blender — and what came out were tender, flavorful little patties that taste far more indulgent than they are.
They’re protein-packed, moist from the spinach, and that feta gives just the right amount of salt and richness. It’s a quick, affordable meal that fits easily into a bariatric plan or any high-protein lifestyle.


๐ŸŒฟ Chicken Feta Spinach Burgers

Yields: 5 patties (about 2.5 oz each cooked)
Prep Time: 10 minutes Cook Time: 10–12 minutes

Total Time: 20–25 minutes

๐Ÿง‚ Ingredients

  • ~15 oz boneless, skinless chicken breast (made 5 raw patties at 3 oz each)

  • ½ cup crumbled feta cheese

  • ¼ cup minced onion

  • ¼ cup finely minced spinach (fresh or squeezed frozen)

  • ½ tsp chicken bouillon powder

  • ¼ tsp garlic powder or 1 small clove minced

  • Salt and pepper, to taste

  • Nonstick spray

If you’ve never made your own ground chicken — you should! It’s incredibly easy. All I did was cut boneless, skinless chicken breast into chunks and toss it in the food processor (a blender works too). In seconds, you’ve got fresh, clean ground chicken with no fillers or mystery ingredients — just pure protein ready to season and cook your way.

If you’ve ever grabbed one of those Jimmy Dean Eggwich sandwiches, you know how convenient they are — warm, cheesy, and ready in minutes. The only problem? They’re pricey, processed, and not always the best fit for a bariatric lifestyle.

That’s why I started making my own little eggwiches at home. They’re quick to prep, portion-friendly, and cost just over a dollar each. They work beautifully for smaller appetites after surgery — high in protein, low in carbs, and perfectly balanced in flavor. I can make a few ahead for the week or fix one fresh in minutes. The Dash grill makes perfect round egg patties, but a small skillet works just as well.


๐Ÿฅš Homemade Jimmy Dean Eggwich (Faux Copycat)

๐Ÿณ Ingredients

  • 1 medium egg

  • 1 tbsp cottage cheese

  • Salt & pepper to taste

  • Optional: minced veggies (bell pepper, spinach, onion, etc.)

  • 1 slice Canadian bacon (or sausage patty, or ham slice)

  • 1 slice American cheese

  • Optional: drizzle of Sriracha or other sauce
