Weird Wednesday Store Finds 4/28/21 Good &Gather Artichoke Tapenade

 






This is a review, of my own of the Good and Gather Artichoke Tapenade from the Target. Cost was 3.99. I am always on the look out for different things to try. This little jar however was pre-ww blue, and I regret to say that 2 tbsp. is worth 3 points. Not too bad, but for my buck I would rather have hummus.

When I opened it, it is that off white color like artichokes and is to have olive oil, sea salt and lemon.



 I put a little on the Baggett that I bought from Sam's Club. (side note: the members mark baggett is 3 points for a third of a Baggett and that gave me like 8 thin rounds to smear that tapenade on)



The first bite, was a let down, it tasted so flat. I added a bit of salt and it came together a bit more. I have now taken it added some fresh lemon and little more salt and it is really good. Too good for me now. 



I am not going to eat those points today. I am however going to take it and use it in the middle of a chicken spinach artichoke kind of dish next week. I will not waste it. 

Waste not, want not. Even if it isn't WW friendly, I still have to make it work.

Scotch Eggs ww blue



Scotch Eggs

First let me explain. I am trying to use what I have at home with a normal family. So some of the items I use will be higher in points.

For this one you can use other meat to wrap around the egg.

The Butterball Turkey breakfast sausage is 2 points for 2 oz 

The Jennie O is 3 points for 2 1/2 oz

The Jimmy Dean Pork breakfast sausage is 7 points for 2 oz

One more option which would be to purchase the leanest ground turkey and add to your own breakfast spices for sausage. I found some at the Amazon.com. If I had all this, then this would be what I would have used. 

This is for the blue plan. and boiled eggs are 0 points.

 The choice is all yours and your plan and your points. 7 is still okay for me, because I only eat one and it is filling enough. The are good cold also. So matter what meat you use it is all the same technique. 


The Menu:

Scotch Eggs   (ww blue - this recipe and with the jimmy dean - 7 points an egg)

The players:


1lb of jimmy dean breakfast sausage ( I doubled mine)

8 hardboiled and peeled eggs.

Pam spray

The game:

Cut the sausage up into 2oz portions.


Spray your hand with a little pam spray or non-stick, makes it easier to mold onto egg.



Take 2 oz and patty down a bit in your hand and lay egg in it. 



Carefully squoosh and mold it like a cover on the egg.


It will make 8 with the 1 lb, but I double it for a large family. Plus they are very good cold. 

Spray air fryer and drop in 6 and cook 360 for 10 min. (go in once and turn over gently)  If you want browner, then step up the heat to 400. for another 2-4 minutes.

** make sure all of the egg is covered.





If you do it in a regular oven, spray pan, or parchment, or foil and the lay in eggs, Bake 350 for 20 minutes and turn over in middle also.

The reward:



There are such a hearty fast quick pack of protein. What could be better than sausage and an egg.

These also are a great idea for meal planning. You can trim the points down and add a little fruit and you have a complete meal. 

WW Blue Notes
This was a really satisfying. I used my instant pot to make 24 eggs at one time. I will post on how easy that can be. I love just a hard boiled egg and a cheese stick.
That is one of my ww blue hacks to stay on my journey.

Chili Cheese Fries WW blue 10




Menu: Chili Cheese Fries    (ww blue - 10 ) (please remember you can reduce points)




The Players:

1 Medium Potato with Skin (ww blue 5 points)

1 cup of Turkey Chili ( I used Hormel Turkey Chili (ww blue 4 points ) you could have also used a 1/2                                     cup for 3  because it was really filling and satisfying)
                                    
                                    - next time to reduce points I will make my own 0 point chili - which I will share                                      with you in a few more posts)

1/8 of a cup of Velvetta Shreds (ww blue 1 point)

Diced Onion (ww blue -0)

The Game:

*Take the potato and cut it thin, with skin on, into long strips, like fries. Put into a baggie. Spray with a bit of non-stick spray and season. Shake up in bag coating everything.
 
*Spray your Air Fryer and drop in fries and set 400 for 15 minutes and shake half way.

* Remove fries and Place in a heat safe container. I use a mini meatloaf pan, that I lined with foil so that I could lift them out and put on my plate. you could also take foil and make a nest out of it, bit enough to hold the fries and the stuff you are going to put on top.



*Fries first, then layer on chili, and the cheese. Pop back into air fryer for about 5 minutes to warm up the chili and melt the cheese.

* Pull out ( I pulled up my foil and layed in my dish) at this point put your toppings on. I used diced raw onion.


You could put queso, jalapenos, sour cream

Any way you like to eat this, This was so filling and so yummy. You could also pre prep these and just heat and eat they would hold up really well.



I took a picture with my hand so you can see how much it made.


This was a great lunch idea, and like I mentioned could be a premeal for a weekly idea.

This was a really satisfying meal. I could have even cut back on the chili and it still would have been plenty. The choice of the potato was a personal preference for cleaner, healthier options, but the fast fries are the same points and would have been yummy too. So you do you.

Let's Talk WW for week 4/23/2021


Let's Talk WW week ending 4/23

I have been hanging on the edge on whether or not I wanted to invest in time to do a blog on this WW journey that I am on the path of. I will have to go back and fill you in on about me, and how I got to this journey, which I will as I evolve this blog a little more each day. 

I at the moment probably have no followers or even any one to support me, on this blog. If by chance you run across me, stay a bit, you are more than welcome to even hang out. 

I have periodically checked out other WW blogs, and even WW you tubers. They are all cool and they seem to be doing well. I do notice that some of them are doing really well. I just want you to know, I have over 150 to 200 lbs to loose. I am 60 and I have no metablolism, so really I am a mess to start with. I did not pursue the you tube, cause who wants to see a 150lb over weight old woman trying to help you see the light. 

So I chose the blog to help you see a little light. I really just wanted a platform to share the recipes and the food choices that I use to follow my journey. To try to hold me accountable, and just something to keep my mind off of eating the next bag of chips. I am on the WW blue and many days, I am just that WW blue (sad)I have although lost 50 lbs over the last year. It is such a slow process, and yes I have heard, long as it took to put on there it will take to take it off.".

I am going to come here every monday, and just do a Let's talk WW for the week . Gives me a platform to tell you what I am learning, doing, not doing, and you can share back with me. 

So this week I wanted to touch on the subject of the Potato.

I am trying to eat more natural and healthier options of food and do the WW. Now don't get me wrong fast frozen fries and quick and yummy, especially in the air fryer. You get like 22 of them for 5 points and that is pretty good, makes like a nice handful. Especially since I am finding out that most of WW range for points is usually a very nice portion and that is it. Portions is such a key role in all of this. I will come back to this subject in another post soon. 

So in exchange for the fast frozen fries I seem to gyrate to the medium potatoe (skin and all) I slice them thinly like fries, toss them in a bag with a squirt of pam spray, and season. Then lay in airfryer (yep, you can do these in there too, just a few more minutes) or you can bake. 400 for 15 min and toss in between. 

They turn out just so good and to me I think more filling, maybe it is the skin that makes them feel that way.

Breakdown
The calories are about the same. The fat is considerably lower. Carbohydrates were higher in the potato but the fiber was higher, lower sodium and more protein. 
To me this is a better bet, the potato, nothing added to it, it comes like it is grown. I did season it, so the sodium may have been higher.

Notes:
I was much more fuller on the potato than the fast fries. I was also more sleepier, with the fast fries as my choice. The potato didn't hit me so hard in the sleepy part.
Too much carbs makes me sleepy. I guess it is a curse, kinda an inside body alarm. Leads me away from high carbs if I want to stay alert and ready to go.

I am hoping that I may have shared something interesting or atleast let you see what I have been figuring out. I love when people share ideas and thoughts, that is what makes us a growing human being.

Goals
>Try to atleast be active 15 minutes twice a day. For a good three days next week. Will update that.
>Try to drink atleast 64 oz of actual water. I am thinking that I am going to have to not drink, yes, not even my coffee until I hit a 1st marker of water, 32 oz. I am going to give it a good try.
