The Tortilla Fold Up Sensation 2021 Breakfast Egg Cheese and Bacon
The folded tortilla sensation that has hit the internet. It is the all new way to make a pocket sandwich. It really is a convenient and quick way to make a to go, and hand carriable sandwich. I found this to be easier than rolling it in a burrito style, cause my ends always pop open. This you just have to pick up carefully to keep filling from falling out until you can get it to the grill, or the pan.
Easy to make on a panini or even to grill in pan on the stove. The inside ingredients are up to you.
This one in particular is the first time I tried it. I decided that breakfast would be a great start.
I made it really easy by microwaving my eggs also. That is a quick way to do that.
*Microwaving Eggs.
Take and egg a person and scramble. If you are doing one, then you just scramble and microwave around a minute and stir, then add additional time for how dry you want them. Leave them with a little wet on top and it will keep cooking as you break them up. I did four eggs and it took about 2-3 minutes.
I also used the precooked bacon strips. They are so really quick and already, greaseless.
So let me get to putting this together for you.

anything else you would like. There are four sections to fill and for my husband, who dislikes veggies of any kind, I just halved his cheese and went from there. In mine I put a quarter of an avocado. | | |

Instructions:
1. Take your tortilla and cut a slice in the bottom of the tortilla, middle and only up half way.
I use the wellness low carb/high fiber ones. For the kids I used the regular ones.
2. Then we build it. I figured that the bottom left would have the cheese so it melts and hold it together.

3. Then we start to fold bottom right, and all around until we get this little neat triangle.
4. Pick it up carefully and then lay in a pan or a grill or even a panini seam side down. I bet you could even microwave it. I just like the crispy you get from toasting in a bit in the pan. Don't worry about any cheese seeping out it will brown as you cook it.
6. Let cool a bit and serve.
I had to make two for everyone.
These were such a hit. They are already talking about what else they can make with them.
WW BLUE NOTES
This also is a great option for WW blue, that I am on. This with was a 4 point breakfast and if I was being a bit more attentive I bet I could make it for a little less on the point range.
But that is what is so great about WW, it is a journey, a life change.
